Salted Caramel Cupcakes
This was my first attempt at making cupcakes completely from scratch...and the cupcake part was a fail, lol! BUT the icing turned out good! I'm going to share the recipe I used for salted caramel icing and homemade salted caramel sauce!
Salted caramel icing ingredients:
2 sticks of butter (room temperature) ⅔ cup of salted caramel (see recipe below) 1 tsp vanilla extract 3 cups of powdered sugar 2 tsp of milk 1 tsp of course salt
Instructions
1. With an electric mixer, beat butter on medium for 1 minute.2. Add salted caramel sauce and vanilla extract, and continue mixing for 2-3 minutes. You will need to periodically stop and scrape the sides of the bowl. 3. Add powdered sugar and salt, and beat on low until sugar is completely incorporated. 4. Increase speed to medium until you reach a desired consistency. This should cover roughly 12 cupcakes if you pipe them like I did, or about 24 cupcakes with a thin layer.
Salted caramel sauce ingredients:1/2 cup water 1 cup caster/granulated sugar 1 teaspoon salt 1 cup heavy cream 1 teaspoon vanilla extract
Instructions
1. In a large saucepan over medium-high heat, add the water, sugar, and salt. Bring to boil, stirring constantly to dissolve the sugar. 2. Turn the heat down to medium and allow the mixture to come to a rich, deep amber colour without stirring. Instead, swirl the pan around occasionally to make sure the mixture caramelizes evenly. 3. Remove from the heat and gradually pour in the heavy cream, stirring constantly until combined. Be careful, the caramel will bubble vigorously whilst adding the cream. Stir in the vanilla. Pour the caramel into a heat-proof jar and allow to cool completely before using.
